"Anchovy (AN-choh-vee)"

Anchovies are tiny silver fish, about three inches long. They swim in large schools where the sea is temperate. In modern Italy, Spain, and Greece, salted anchovies are offered as appetizers. For the rest of the world, they are usually sold as flat or rolled fillets, salted, and packed in oil. The most popular and tasty are the ones in olive oil and salt.
